These Fresh Spring Wraps are gorgeous!
Light and juicy and the best part is there is no cooking involved!
So you can relax take it easy, and still have a delicious , sumptuous meal ! It is a win win really!
And this goes down a treat with the kids too! My munchkins just gobble these up!
For the Salsa:
- To make the salsa roughly chop the vegetables place in a bowl.
- Season with lemon juice, salt and garnish with coriander leaves.
- Coriander dressing is very similar to the coriander and mint chutney just swap out the coconut for yogurt. This makes it more fluid and is great to drizzle over the wrap. To make add all your ingredients to a blender till it is smooth.
- To assemble the wraps lightly toast them on a skillet then on with the hummus and smashed avo , salsa and lastly the dressing.
- And that is a wrap!
