Healthy Vege Fritters

I love recipes where you can sneak in veges and the kids will never know!

This Vege Fritters recipes is just like that, I have sneaked in some sweet potato, broccoli and cauliflower which I otherwise would struggle to get passed my kids.

These Vege fritters are great as an after noon snack or as a side. Or you could even use them as burger patties!!

They are super versatile and loaded with flavor, veges and are so healthy!

So lets get started!

You will need:

For the sweet potato fritters:

Boiled and mashed potatoes or sweet potatoes (I use both)
Grated carrot
finely diced and sauteed onion
Sweet  peas (optional)

For the Cauliflower and broccoli fritters:

Riced steamed cauliflower
Riced steamed broccoli
Grated Cheese (I like Edam)

Fresh finely chopped coriander

Coriander Powder
Cumin Powder
Smoked Paprika (I find this goes very well with cauliflower)

1. Add all the veges and cheese to a big bowl
2. Add all the spices and the fresh coriander
3. The potato and sweet potato should be enough to bind the balls but if you finding the mixture a bit wet add some bread crumbs.
4. Shape into balls
5.Place in the freezer for a couple of hours till they are set.
6. Place in an oven tray and whack in the oven or air fryer for 20 minutes.


Today its a bit rainy and gloomy out side, so these balls will be prefect for when the kids come back from school!

Also a neat trick with these is that you can make them in advance and just pop them in the freezer till you are ready to gobble them all up!
